So I need to get a Antminer L3+ up and running today, but the local Best Buys/Staples/Office depot only have up to 650-850w PSUs. Would it be possible to run (2) 850w PSUs for one miner?

As long as each PSU is powered on at the same time, and I connect 2 PCIEs to each board from the corresponding PSU, and do not cross 2 different PCIEs onto one board,  it should work perfectly fine right?  Huh

You have the correct methodology for running a miner with 2 Power Supplies, but why limit your options for PS buying to Best Buy and office supply stores?

I would definitely check out other stores as well. However, there's a chance that high wattage PSUs are unavailable or on back-order still, since there was a massive spike in demand during May and June. The dust is slowly settling since the market has been crashing, but it could still take some time until PSUs are easily available again.
