Just wondering if the Internet speed and latency have an effect on mining success?

I can set up my miner at my place with regular broadband, or setup at my parents with fibre to the house.

Mostly irrelevant unless you're doing 2 or 3 wireless hops.

I'm using Wifi on several systems and I have almost no rejects with BTC or LTC.

Agreed.  Multiple WiFi-connected machines here too.  The overall stability of the network and how often their may be any outages of any significant time would be something worth considering though.
