Hi guys I am building new, first rig.

 6 x sapphire RX580 nitro+ gb (over 0.6m USB 3.0 PCI-E 1x to16x Extender Riser Card Adapter with SATA Power Cable) and not sure how to plug them. I have win 10 now and one of the GPUs in the main slot in of the motherboard. I want to use my hx1200i to power it all but I am not sure if possible as I am not sure which cables/slots use properly

1. is 6 x 6pin slots and 6 x 8 pin slots enough to do that?
2. should I plug them 1 by 1 restarting my pc everytime or should it be okay to just plug the other 5 at the same time and windows will detect them?
3. if not then I have second PSU 650v and I am wondering if I can mix cables randomly, like plugging one 6 pin cable from PSU into one card and 8 pin cable from another PSU in the same card?

rx580s don't require both power slots only the eight pin one. The hx1200i will be enough to power 6 cards. I have a hx 1050 and it's doing fine with 6 rx 580s. Plug them in one at a time checking the device manager to make sure the computer sees the card then power off and add another. Rinse and repeat.  Good luck.  If you run into problems , check and make sure you pci-e riser is good.  I have had to deal with a few bad ones on several builds. Also do not plug more than two risers per sata cable. The hx1200i should have at least 4 sata cables, use them. What kind of motherboard are you using?  Asrock h81 btc pro is the best board and is pretty much plug and play.

Thank for help! I have Asus prime Z270-A and I connected 5 cards. I am not sure what to do now with the 6th one as I used one of the 8pin slots in the PSU for the processor on my mother board. Hence a question.

Can I use 1 of my 8 pin cables to connect two cards via 6+2 ending or maybe use a 6 and 8 pin cable to connect power the processor (6pin in the PSU and 8 pin in the motherboard)?

Don't ever mix more than one PSU on a single piece of equipment!

Also, the 8 pin CPU power is 4 ground 4 hot, the 8 pin pcie is 3 hot 5 ground, they are not interchangable.

 It's OK to have three cards and the mobo powered from one and two cards and the HDD powered by the second PSU, but never use two PSU for one card.

12v transformers in a psu put off slightly different outputs and use a ground connection unique to that transformers output. If you give a device two different ground connections then all hell can break loose

can I power two cards with one 8pin - 6+2 & 6+2 cable? just using one PSU

If I do that should I also fill 6 pin slots in both cards?
