Right now I am aware of three platforms where you can spin up your own child chain: Ethereum, Ardor, Stratis. Ethereum child chains are for much larger enterprise editions and not easy to do. Ardor promises ease but still away from Q3 launch. Stratis promises ease with C# but seems to be the least developed at this point without much documentation.

Firstly, am I missing any chains where I can spin up my own coin?

I have a brick and mortar internet cafe selling some perishables and computer time. Id like to change to be as digital as possible. Id like to assign my own token to function for all sales of products inside the store, so the customer would hand me cash/credit as their transaction and in return would receive a UHF/RFID chip/card/account that they could then use to login or purchase items throughout the store. Is there a simple way of doing something like this yet?

I now see emercoin and Chain, I am unfamiliar with both, will investigate more.

I could be wrong, but I'm pretty sure XCP (counterparty) is another one.
