I've got an old CPU\MB lying around, it's a Q6600 and ASUS P5KC, specifications below.

Would this be suitable for chucking in a couple of cards?

Looking at getting 2 GPU's, what would work best with this setup?

2 x 1060
2 x 1070
2 x 1070ti

Also it has 4GB of DDR2, would this be enough?

I think you should be fine with that combination. You don't typically run into CPU limitations for GPU mining with "only" 2 video cards and in any case a Q6600 beats some of the super low end Celerons that people have been using in mining rigs the last couple of years.  I have not used that specific motherboard for mining, but it certainly should handle 2 GPUs without issue.
