those you see on forum are mostly gpu mining,

about your virtual machine, i suppose you have a vps got from a hosting company, in which case mining will be useless for you and will only end in terminating your vps according to many hosting companies. dont even waste time on searching mining solutions, if this is your case, otherwise if you have a real xeon processor, you can search forum
and also google for cpu friendly coins Wink

I hope you guys can give me some advice...I want to start mining altcoins but doesn't know which mining software/service is best suited for my Virtual Machine.
I see a lot of offerings on this forum! and a lot are AMD or Nivia related...but unfortunately Ive got an Intel processor...

any thoughts? My Virtual machine has an Intel Xeon processor - CPU E5-2660 0 @ 2.20Ghz

Seeing here you do have an old CPU which even on CPU mining this processor wont really be profitable at all. The thing you do read up on this forum which they are mentioning on mining altcoin by the use of GPU ( Video Cards) which you can really actually mining altcoins on this one and CPU mining isn't really possible at all as of now.Even how powerful your processor it wont really be profitable.

Edit: On minergate  you can actually see altcoins that can be mined by CPU but seeing on the specs it is somehow impossible.

Mining with cpu, even with less cores.. It will make nearly no profits.
You can try mining Monero, which is known as most profitable for CPU mining.
Download mining tools like xmr-stak-cpu.
