exchange cryptocurrencies is only a fraction of what is possible to do with them. You're basically describing how bitcoin works (the exchange of value from one person to another, or one holder to another holder) that is the main function of BTC and its original intent, as you described by satoshi. But since then there have been so many more alternatives, and the best example is ETH to understand them. ETH basically lets you program anything you want in order to create applications that can handle on their own cryptocurrencies. So you can create legal contracts that fulfill on their own (for example, a car crosses a red light, the car is registered to an address and is beeing directly charged for the misdemeanor). That's just one example but there are so many more. ETH is the best way to explain that in my opinion.
