What is the most reliable and safest way to get crypto into FIAT?

It depends, in the EU I have plenty of options to choose from and I hear they even have some BTC ATM's scattered around the country. There's also a bus that allows up to 5000$ cash BTC transactions driving around the country.

You will have to scope around a bit on the internet and if you can't find anything or find it too risky/dodgy then your best bet is looking for peers near your location.
I know the Exchange Kraken also does fiat pay-outs but you will have to check if they also provide that for your country. Also when depositing FIAT direct into your bank account be sure to look up regulations/rules and other stuff as there have been cases of accounts being frozen.

Thanks for your input. I'm based in the UK so not really sure about the options we have here. Bitcoin ATMs might possibly be an option but do you have any other ideas?

The most safest way to get crypto to fiat is by implementing peer to peer aka users to users.
It's the best and the safest so far based on my opinion,because they(goverment) can not track your coin and rip you off.
Peer to peer landing you can find it on localbitcoin.com,you just need to find a buyer if you want to sell it and find a seller if you want to buy it.
As far as i know if you're currently in U.K you can use it too and find someone from your areas.interacting with other people is more secure other than exchanger because most if them will ask you about it and ask your document to prove it that it's your own.

Depends on your country. If you don't care about the taxes burden, any exchange linked to your bank account like Coinbase, Gemini or Kraken will do with a wire or SEPA transfer. If you keep amounts small you might not even get in trouble.

Otherwise, there is the solution of bitcoin ATMs or localbitcoins. For the later, using reputable buyers should keep you safe, just don't sell more than 10btc at once.

you can use coinbase or bitstamp for fiat but you should verify your account to withdraw your money. you need to make KYC process.

I'd say trading it for cash via localbitcoins. All other ways get the banking system involved either through your account or an ATM withdrawal code. You could also buy a gift card, but that's not withdrawing to fiat, so it doesn't count.
If you're not worried about banksters, transaction monitoring, paying taxes and all that crap, pick one of the bigger exchanges like bitstamp, bitfinex, coinbase and sell there. Just don't forget to withdraw ASAP.

how much fiat do you want? are you looking for a final cash out or just spending the occasional profit?

for the smaller stuff i'd go for a bitcoin debit card. there'll be atm fees but the exchange rates are pretty good.

the uk is uniquely bad;y serviced compared to most other european countries and america.

Anywhere in the world, there is a community and marketplace for Bitcoin to fiat currency. I myself use localbitcoins.com but there are many other places online that offer trading such as the type you want. Where I'm located, Bitcoin ATMs (like mentioned above) don't exist, and these services are very useful to myself and other Bitcoin users in the country.

the goal is two,the first is to convert crypto into money because he needs money for his needs while the second is because he wants to multiply his money by trading altcoin / crypto.
