All the list of GPUs you want to buy is good but in my opinion, you do not buy Gigabyte. I have a bad experience for mining using the Gigabyte brand.

I bought 8 GPUs ASUS with 8GB. 6 of them are with Hynix and 2 are with Samsung memory.
With moded Bios I’m getting 28Mh/s from each one mining ETH solo. Sure you can mine in dual.
But my rigs have some issue with stability.
In general I’m quite happy with this choice.

The best one is Sapphire Nitro Special Edition for mining but any of those cards can do dual mine and at a very good rate if you mod their bios correctly. So far Sapphire holds the best performance for mining from the AMD side of cards but any of the other brands will behave similarly. Whichever you choose you will be happy with them in mining nowadays cause I am doing with 6 x RX 5xx series right now 5000 h/s monero or 0.00149 btc daily.

If possible take note of what ram is installed in each of those cards.  Samsung seems to be the winner in my experience.  Best stabilty and highest achievable overclocks of all the brands of ram.

Yea they are right on Samsung heels. Honestly with the right overclocks and bios these two are all pretty much same. All within a few percent of each other in performance.  If OP has a choice of one card being similarly priced I’d go for Samsung Over Hynix as I’ve had better luck achieving 2250 MHz stable on Samsung. When you play silicon lottery we will have different exp.   there is ton of threads/sites that compare gpu performance. Google gpu mining hardware comparison   Should be fruitful for OP

Any Sapphire will work fine. 8GB models are a little bit expensive, but they work with Samsung memories, so you will get better performance mining ethash.

I have 6x Sapphire Radeon PULSE RX 580 OC, 8GB GDDR5 - all have Hynix, at least, they have one type for all cards - this makes it easier to edit BIOS
