If I quit the server and restart when soloing, would it resume from where it left off, or would it start from scratch?
How does it figure where to start from when especially other people are mining at the same time on the server?

not quite sure you understand mining. each share is part of a calculation to extend the complexity of the block chain when a block is found its just a pools or miners share getting accepted into the block chain. there is no start finish or guarantees in mining.

if you stop the server then the miners wont get a response and wont know what puzzle to work on and the network wont know what the miners are trying to work on.

Thanks, I have no idea how mining works, so I was just curious.
So, it's collective project as everyone on entire coin network. You could get in just in time before the block gets discovered and get lucky then if you happen to solve it?
Does all other alt coins work like that too?
