Does the price ticker under MultiBit automatically update at a specified interval or does it require a manual update? If a manual update is required does stopping/starting MultiBit accomplish this?

MultiBit uses a library called XChange for the ticker values.
It has an automatic update and each exchange varies in how quickly they update.
From memory I recall MtGox is every 15 minutes and OpenExchangeRates is every hour.

They have to update relatively slowly (compared to something like bitcoinwisdom.com) as otherwise all the thousands of copies of MultiBit out there would appear as a botnet DDOSing the exchanges. As the exchanges provide their exchange rate data free of charge this of course is to be avoided.
