I am using GUI Miner by Kiv on a Windows 7 64bit OS.

My question is that, does the hashing speed drop when the computer goes to sleep after let's say 30 minutes or whatever is set in the Power Options for the OS?

I am thinking of setting the option "Put the Computer to Sleep" to "Never" so that the mining always runs at the best speed.

Are there any points I need to consider before setting this option?

A computer in sleep mode can't hash it powers down just about everything(i'd have to double check it may keep memory alive or that might be hibernate that does that one of them writes the memory state to the hdd) you can however allow it to power down the monitor.
