What does it mean when a transaction, for example at Blockchain.info, shows a single address receiving (sending) from (to) multiple addresses? Shouldn't each transaction have only one sender and recipient?

Usually, one of the recipients is actually the sender receiving change. In any case, there is no reason why a transaction can't have multiple senders and/or multiple recipients.
