What are the best threads / posts to read on the forum for those who want to develop or contribute to wallet development?
I would like to find develop or contribute to thin clients that make the UX for mutisig + customizeable raw transactions good enough for any grandma to use.

If you want to do that, you should start by producing mockups of what you think the UI should look like. Once you figure out how you want the whole thing to work, actually developing a wallet that does it (or upgrading an existing one) isn't terribly difficult and there are several to choose from.
