I have the following icon showing next to my transaction, it's been there for a while. What does it mean? I can't find any explanation in Electrum's documentation.

It's just the number of confirmations of the transaction. The one on your screenshot shows that the tx already has 1 confirmation.

After 6 confirmations, it will show a checkmark icon.
