I have not seen this kind of intrusive request for information, what is the deal here?

I would tell them to bugger off and use a different Exchange.
Aside from AML KYC, all Coinbase asked is what is the main source of coins: Mining or trading? To me that is more than fair as it lifts any flags about new coins that are generated by mining (no output address) vs 'recycled' coins obtained by trading/buy/sell.
