I think it's undervalued, two things make me think that 1. it's just the beginning, all that apps need more usage (more people and eth community is growing) 2. last ATH was over $1000! I think we will see Ethereum establishing new ATH and new bottom! With ETH 2.0 there will be more options for all the people and that can really boost Ethereum price.
You're right. ETH is undervalued since it didn't create a lot of insane moves in the past. However, ETH is the second biggest coin in the cryptocurrency market. Furthermore, I believe that ETH 2.0 will create a big change in the way people rate ETH. Personally, I would choose ETH as a store of value instead of BTC. BTC does really have the power to affect all the other coins in the market but its price fluctuates too frequently.
