I have no good knowledge and skills about privacy based coins but hates the government interfering and taxing everything it can. I don't trust my government with my money. So, is monero the only option for me?
You can use a Mixer service for mixing Bitcoin. That will make your Bitcoins more anonymus. BUT only if you consider a few things. In BTT are few threads that explain this. Unfortunately I don't have a link, but someone else will surely have one. On the other hand you can use Wasabi Wallet. It has integrated Coin Join and it seems pretty good against chainanalysis.

PirateChain (Arrr) seems the most privacy coin which I know.

Since I got into crypto I have always really liked monero!! I noticed that the USA in particular doesnt want monero to be used for obvious reasons, but why is something like zcash, dash allowed to be sold on gemini, but monero gets blackballed from gemini, coinbase something fishy there it makes no sense to me. The coin has a great use case and most people love it! I would assume that privacy coins will be banned from exchanges at some point because of money laundering concerns, but I hope not! Does anyone know why monero cant get no love from gemini/coinbase is it because the issues I mentioned or something else??
Maybe those governments not aware of the other privacy coins so they forced some exchanges to delist popular privacy coin like Monero. Privacy coins may not be appreciated by government even if cryptos are made legal so privacy coins will take the place of decentralized trading platforms in real soon.

maybe they are great at hiding user data, but other coins are still far more interesting.

Afaik, Monero is a well known privacy coin but we have less use case for that coin that is the reason why it have less trading volume in the recent days.But in future if we adopted to crypto transaction then privacy coins will play important role in huge transactions.

Monero getting delisted from some exchanges isn't because of lack of volume or market cap, it has something to do with centralized regulations of sorts, it's not a bad move, I believe privacy coins will do better with dex exchanges in future because I feel that's where they belong

no, i think the volume of monero is huge enough on every exchange
and for me thats not the main cause mate, i think the cause why government hate monero is because this coin bring more privacy to their users
