Is it worth it to convert older video cards to mine?
For the time being take the electrical cost out of the equation.

I have (2) nVidia NVS 310 1GB cards that I'm wondering if I can just setup in a corner and just let them go.

what could they mine?

Sorry bro even if you have 100% free electricity you won't generate a penny out of such graphic card, they are 101% obsolete and there is nothing you can do about it, you can either buy graphics card like RX470 with 8gb ram or gtx1060 with 6gb ram

That card  Grin can't mine even a worthless altcoin with low mining difficulty because it's so outdated that every available miners in crypto space won't recognize or support such graphic card, better use that for display only purposes, I believe that's the only thing this gpu can do. Sorry mate

Gone are the days where you can mine bitcoin will any graphic cards no matter how weak they are, even a pentium 4 can mine some bitcoin per day, sorry mate such days aren't coming back, you have to buy today's mining graphic cards if you are interested in mining some coins for real
