Hello I am creating this post in hopes to ease some of our users minds.
Our users have been screaming EXCHANGE for months now and while
we currently are ok with this idea we are NOT up to the NOW on
easy to list at exchanges. If those who are reading this could please
post some easy to list at exchanges for our users, our users would be
very much appreciative of this information.

If you mean by easy is actually easy then head to the unknown exchanges. There are plenty of them and sort them out through this list: https://coinmarketcap.com/rankings/exchanges/
Well, the lowest in the rank - 3 digits, usually they're the exchanges that don't have much volumes and visits and if you're going to list your token with that criteria. Your token will really get there with a probable cheap listing fee.

You have created a new coin with new blockchain and ecosystem (wallet,etc). That would be so difficult for your  coin to be listed on the exchange site if you didn't pay some fees for the exchange site to listing your coin. Hotbit may become the easiest one to list your coin but i must remind you that if the exchange site needs to integrate with your blockchain as well and i doubt exchange site are also interesting to do that.
Why don't you just migrate to the existing blockchain ecosystem that already supported by so many dex with free listing rather than still use your own blockchain?
I see that this will be more difficult to be listed on exchange site for a new coin with new blockchain,
