How can I recover a project when the main developer died?
Nfts and erc20 was already deployed, we have the GitHub and also recovered the main déployer adress.

Sad to hear that.
But for the restart to project you can hire a new Developer but remember he should be experienced with enough skilled to your concept. And you are alreay mentioned that you have the backups so I don't think there will be any problem. But if there is a qestion that if you lost your private keys of your wallet then nothing to do .

You'd need login+passwrd details for everything. Plus, any associated keys.
If you can't get that, then it is a no go.
