Doubt with Bitcoin mobile application.

Most of the application that I download related to Bitcoin prompts following dialogue box before starting download:

This application needs access to
- Photos/Media/Files
-Camera/microphone
-Contacts etc etc.

1. When I say okay and download them, do they get access to all the details lying within my phone?

2. Can we consider application not earning from advertisement, seek revenue by some other means by processing information accessible by them?

3. How does one make profit from an application that is accessed by masses without broadcasting any advertisement?  

I request you to enlighten me with facts associated with applications that common people are not suppose to know/ignore.
