Im familiar with bitcoin.  Etherum, not so much.  So here is a basic question.  I make a contract with someone that says I'll give them 1 coin if Patriots win the next superbowl.  Then after the game is over, the other guy enters into etherum system that Pats won, and I enter in that Cowboys won.  So what happens? How does that work?

For that you could use Augur's prediction market. If you predict the outcome, you make money. Not sure if it is out of beta tho.
