How can I start Stratum proxy?

I tried to start Stratum mining proxy on my windows machine with the same flags I use to start CGminer and Stratum did not recognize those flags.

what are the flags I should use to start Stratum Proxy?

for example how can I set my worker username and password

and how can I define the host?

Installing the proxy is pretty trivial:

Download official Windows binaries (EXE) or source package for Linux from this page.
Run downloaded file. Console window will appear and proxy automatically connects to the pool. No command-line parameters required.
Now just change the URL in your miners from http://api.bitcoin.cz/ to http://localhost:8332/. Miners connect to the proxy using the old protocol, but the proxy talks to the pool by the new one!
If you have more mining rigs on the same location, you can connect all of them towards this one mining proxy. It means that on every other mining rig you will replace the URL http://api.bitcoin.cz:8332/ by http://IP_OF_PROXY_COMPUTER:8332/ .
You're done now! If you configured everything properly, you'll see share submissions in the proxy window.

This is only true if you're using the Stratum proxy on slush's pool.  For other pools you will need to run the proxy with the arguments '-o <hostname> -p <port>', ie:  -o btcguild.com -p 8332

You don't. There is no option for it. You set it in your miner.

Start running stratum proxy on one of the machines in command line "mining_proxy_1.1.1.exe -o btcguild.com -p 8332"
Then in your miner set the server to connect to is your local ip that would be 127.0.0.1:8332
Then just use your regular username and password for workers.
If you want to point out your other machines to stratum just put in the ip address of the machine already running stratum. 

Also easier just use cgminer 2.8. You don't need stratum because it will automatically connect on stratum.

Stratum connectivity is built into cgminer and bflminer. Use one of those, that's the easiest solution.

I think you can collect some interesting statistic through a proxy if you're running multiple nodes. Perhaps you can with the mentioned software too but might be trickier.
