I noticed that droark created a breakdown of the Bitcoin Core source at https://github.com/droark/bitcoin-dev-notes/blob/master/Bitcoin_Core_source_breakdown.md. Does such a thing also exist for armory?

Not to my knowledge. I wrote that to teach myself about what's inside Core, which is pretty large at this point. With Armory, I just got thrown into it in late-2013 and didn't have time to write something similar. Maybe I'll write something similar for Armory, or at least toss up a doc that people can contribute to? (I also have 100+ pages worth of Bitcoin-and-Armory-related notes to post. I've just been lazy about finishing the conversion to Markdown.) I'm happy to help get the ball rolling.

If you could put up a doc with notes on armory, that would be great! I am trying to write some changes but when I get to the C++ part, I find it hard to figure out which file has what I want to change. The Python part is relatively self-explanatory.
