Electrum server peers

I'm bootstrapping my first electrum server, using the electrumx implementation. My first question after a ton of readings about the enviroment variables is the following: why my electrum server contact also other electrum servers (peers)? I understand IRC and public lists for the clients, but what is the function of server peering?
