Hey peeps, I did do a quick search and sort of already know the answer, but since I'm making a sizable investment in a farm I just want to ask it directly:

Is 208VAC good enough to run the Bitmain APW3+ PSU? I know the literature says anything >205V is good to start it, but since it's so tight I want to triple check before I wire it up based on this design.

Also, bonus points: Is 208VAC good enough for most PSUs, in case I end up looking for different options other than the APW3+?

208v is fine for the APW3 PSU. Most server supplies can run 176-250v, just check when you purchase. Most supplies will have a lower total wattage the lower the voltage is however.
