I googled a bit but could not find graph for trading volume, for let's say Poloniex.

So i could see how much they have increased in volume since per say, last month.

Is there anything like that, just curious?

All available API calls are at: https://poloniex.com/support/api/
It would be possible with some calculations.

returnChartData would give you volume based on date.

You then calculate the increase in trading volume.

do you already visit in coinmarketcap.com? i think you can see the volume from each of coins by monthly and you can collect all of the data that you want. i think in that site, you can get complete data so you can make your own analysis. i always checked with the site and see if there is any increase of the coins that i bought so i know how is the trends of the coins.

the best way is to access their API, if they offer it like Poloniex and get the data to analyze yourself. but this site has the information you are looking for.
you can sort it based on the exchange and/or coin you want.

coinmarketcap does't have this
