Curious as to what an average person pays for let's say an ether mining rig that's producing 125 mhs
Which according to coinwarz  gets you approximately $23 per day at today's current ether price
Thanks

The most important factor in a rig's cost are the GPU's and what you pay for them. With the RX 570's 4 GB cards you can easily get 28 MH/s each on ETH after a Bios mod. You should expect to pay ~$200 each currently. The problem is getting multiple cards at the same time, as most vendors are limiting purchases to one or two cards, when they have them in stock. Add another $500 - $600 for a PSU, motherboard, CPU, ram, risers and materials to build a mining case and that should get you close to the minimum you would need to spend.
