You've got a few options:
1.) I'd check the Windows System Logs to see if there are any events that could narrow the issue down.
2.) How many watts are you drawing? Do you have a Kil A Watt

4.) With Nvidia 1060 cards I'd try Equihash coins which will use the EWBF client
https://bitcointalk.org/index.php?topic=1707546.05.) I'd install MSI Afterburner and the top line of each card I'd lower the power to 75%. If your power supply is close then lowering the power to all the cards will stabilize things.
Really though it would have to be power or a device driver/hardware causing the issue. I run 5 1070s but I use two 750 power supplies just to make sure.
