Does anybody has explored the bitcoin blockchain in order to determine the total number of bitcoin addresses that hold bitcoins so we can estimate the number of people that uses it?

You can't estimate the number of people using Bitcoin by the active addresses because people can create as many or as little addresses as they'd like.

Yes, but people do not usually hold bitcoins in every address they use, so checking the addresses having at least a given amount of bitcoins could be used to estimate the size of the bitcoin 'community'

Actually yes you can. An address that has never received Bitcoin is "inactive". So any address than has ever processed Bitcoin can be considered "active". You can't figure out if they are still used though...
