During exchange-transfer time how does it work, price ?

I exchanged Stratis for Eth and after many hours it still didn’t go through.
I wonder how it influences price ? At the time I press exchange the price is settled ? So I basically already have ETH so even if Strat goes down it doesn’t affect?
This is important right, even for transactions that take 15 minutes it could influence unless it is settled directly.
