Bitcoin Game

I've been playing around with a small bitcoin gambling game, and would like some advice.

Where would you set up the servers to run a game for bitcoins which involved gambling? I would like to set it up in mexico as I'm there half the year, and have direct access to the servers. I have a couple of friends in Switzerland and on the Isle of Man, who mentioned they could host.

I'm mainly concerned on the legal issues of running in any of these countries.
