Vega 64s are currently the best GPU for the Cryptonight Algorithm.
Vega 56 and RX 580/70s are good too. AMD cards are better than Nvidia currently for cryptonote coins.

You can use RX 580 for mining XMR, the hashrate and energy consumption are satisfied.

Sure. If you want to get started and get a feel for everything, I wouldn't hesitate starting off with one gpu. |

how many h/s with Nvidia cards? No idea. I've never tested it with Nvidia cards because other algo's are more profitable with Nvida gpu's. |
