My PSU says it supports 6x PCI-E....I cant seem to find them, lol

Power rails -> https://images10.newegg.com/BizIntell/item/17/151/17-151-189/k2v_061317.jpg

How the heck do I plug in 6 PCI-E power cables?

1 x Main Power (24/20 pins)
2 x CPU (8/4 pins)
6 x PCIe (8/6 pins)
10 x SATA
5 x Peripheral

You need a second PSU with PSU to PSU adapter. It's the safest way and it is what I had to do too.

it uses  dual head cables so 3 cables have 6 plugs  each plug has  an 8 pin and a 6 pin

I would not use it for mining.

I would use this

http://www.corsair.com/en-us/rmx-series-rm1000x-1000-watt-80-plus-gold-certified-fully-modular-psu-na-refurbished

https://www.newegg.com/Product/Product.aspx?Item=N82E16817139140&cm_re=corsair_rm1000x-_-17-139-140-_-Product

every cable has  6+2 or 8 pin plugs

buy some extra dual head cables from corsair

Ended up ordering another PSU and the 2-psu adapter, quickest option rather than returning PSU and then getting another one+extra cables.
