I was curious if it is possible to find out about any of the relevant details about the miner or miners that work on my transactions. For example, is it possible to find out their ip? Or how about the wallet address where the coins were sent to?

They record the IP which relayed the block but there is no way to be sure if it's the origin IP and often it's not. The coinbase transaction will show you where your fees went.
