BTC can be purchased in small increments up to 8 digits. I think the smallest trade amount on GDAX order book is 0.01. Is this correct? 0.01 BTC equals $8.10 if I'm converting currency correctly. For a new trader with a small account this really makes it difficult to get started. Crypto trading appears a lot different from Forex trading where one can trade for pennies whilst learning. Am I correct in this matter?

Thank you.

0.01 BTC is 81$ but yeah, the minimum is 0.001 BTC on GDAX and that equals 8.10$. If you're just learning, I would suggest trying platforms that have Demo mode trading.
