Curious about how they are actually hosted, for example wasn't SilkRoad hosted by a rented VPS in a foreign country. How did DPR know the company wouldn't snoop on his hosted content?

To answer your question, he probably didn't. I did hear around that he actually hosted the server himself through tor. As in, physically.

That was done, he got one server cloned and sent to FBI.

If you have a lot of customers, you don't lose your time trying to understand what they do.

I'm sure people visioned the old SR's servers to be located in some eastern European country in a safe which if you tried open the HD's would drop into acid... (ok just kidding)

but seriously how could they trust some company not to snoop in and steal the hot wallet coins and there is f all dpr could have done to get em back due to well the site being what it is.
