So i want to create pool/polls for altcoins using: https://github.com/TheSerapher/php-mpos

what would be min server needed or what other obstacles can thre be with adding new coins?

I think you will find as you add more coins you will need bigger and bigger server to do it. Each coin has a block chain and takes up memory.
