Specifically, I've got an older mATX board with 2 pcie slots (I'll have two gpu's to start with), 4gb of ddr memory, and an Intel E5200 (2.4ghz core 2 duo). It runs about about 60 watts at idle.

Any reason I can't just grab a new power supply and scavenge the rest of this machine as a miner? Would love to save a bit of money.

it will work as long as your machine can see the vga cards and there is enough power.
