 exists service or open source project who provide Paymnet gatway for bitcoin with automatic convert to fiat(EUR or USD) without KYC verification  ?

It doesn´t exist.
If it does, it will be shady, illegal and risky (for you). You will probably be scammed.

Every legit FIATxCrypto exchange service will require KYC due to regulations, especially using EUR or USD.

As said above, there isn't. I would highly recommend using BTCPay to be in full control over your funds. You can exchange your BTC to fiat from there, using P2P platforms or Paybis.com (depends on the amount) If you want to avoid KYC.
