I always was a data privacy freak. I just ordered a trezor one after thinking about it the last 4 hours between that and a paper wallet. So now I need to know what should I do on setting this up and using it without ip / data about me. I see they have a web wallet not sure how secure / safe it is. I would love to use it as easy as possible but also with privacy obviously I know that on chain isn't private but im talking about off chain. I tried clicking on it to see what it will ask it's already asking me to download something.

You have to download trezor Bridge to use a trezor whatever software you're going to use.

If you want more anonymity you can channel bitcoin and other altcoins through their specific electrum wallet, connecting through tor. (just enable it like a normal socks5 proxy with the tor control port afaik)... This'll mean you probably won't be sending information to trezor (haven't checked the connections trezor Bridge opens).

Trezor claims not to log any user data in their Trezor Wallet. If you use the beta version, it sends some usage data and error logs due to experimental features. If you are really concerned about your privacy then you can use Trezor Wallet once - to initialize your device. For receiving and sending transactions you can pair your wallet with Electrum. It even supports more features (coin control and generating native SegWit addresses).

Trezor Bridge is required to use Electrum and Trezor Wallet if your browser doesn't support WebUSB.

Here is a tutorial for Electrum. You can skip the first part with the commands; follow the pictures step by step. Don't forget to download the latest Trezor Bridge.

You can also run your own Trezor backend including your own full node for it. The full setup, however is very resource demanding, it takes about 2.5x size of the chain.
