Not the brightest bulb on the string here. Can someone explain what 'staking' is? In simpleton terms please.

Its getting paid a percent of what you hold in your wallet. That percent varies by coin. There is a list of the highest POS (proof of stake coins) found here: http://bitcoinlasvegas.net/category/highest-percent-proof-of-stake-coins/ . They are in order from the highest percent to the lowest.
