Does anyone know of a product (digikey, etc) or similar of a board that would connect to the psu in the picture so turning it on and getting to the voltage connections would be easier?  Thanks!

If you look there are multiple people that offer breakout boards.  They not only turn it on but allow PCI-e cords to connect easy on most.

Normally they cost extra for cords, but the companies on the board normally offer quality cords.   As far as servers PSU's sold on forums anything from like 700 watt to like 2800 watt.  So a very LARGE variety to choose from that offer breakout boards.

Yes, I have them working very well.  I just need and easier/faster way to get the wiring completed (and cheap) Smiley.  Not sure this psu would be for the masses as there are no internal fans.  Has anyone seen a breakout board for these?  I have searched for a few weeks before posting so please give me a link if you know of one.

what kind of external fans do you need on those?
I can probably make a design for this PSU if I can have easy access to one and if the mating connector is easy to source.
Small custom batches are 10 boards.

Edit:

The PSU looked familiar, and after checking my spare parts stock, I know why.
I have 6 of the right angle mating connectors in hands.

I did a quick estimate of price for a batch of 10, you'll be roughly at 45$ each board with 8-12 PCI-E plugs and fan headers if needed (not PWM), design almost the same as this one:
