why so? escrow can hold btc and wait for the confirmation of sia received by buyer right? I guess the escrow will need to hold the Sia and not the BTC...

Again, how do you prove that the other party received Sia to his wallet/address ? (how do you, as a sender prove you have sent X Sia to X address?)

thats why you use escrow. Or sia seller sends first and hopes the buyer isnt doing a reverse screw over.
although there will be block explorer soon says taek

(how do you, as a sender prove you have sent X Sia to X address?) oh i see what you mean.. since there is no TX fees on Sia, you need a trusted escrow. Sia seller sends to Escrow wallet. Once escrow has Sia (instantly), but to be safe I assume wait a day? Escrow says ok to Buyer who sends BTC. Once Escrow sees BTC tx confirmations, Escrow can send Sia forward. At that point, if Sia does not arrive, either the Escrow or the Buyer are screwing up.
