This "strange transaction" happened:

https://blockchain.info/it/block/000000000000000000c6de332035e49f80293748b1b4d4931fde1d5d4978a83a

Anyone knows why?

The network tries to produce one block per 10 minutes. It does this by automatically adjusting how difficult it is to produce blocks.

This is Block #397447, an empty block mined by F2Pool. Tx is https://blockchain.info/tx/2ab722f923681ddfb00bfffa81bf9cdba9164ea1f6bc58bc64bb54488332712b. Nothing strange about it.

What is strange about this transaction? you do know that this is just the reward given to the miner who found the block right?

...

I see F2Pool and AntPool solving blocks every day with no other transactions (other than the "Newly Generated Coins"), just the BTC25 for the winner (F2Pool here).

OP, perhaps you confused a BLOCK with a transaction?

(Or maybe I am missing something?)

Empty blocks with no other transaction than the reward make the block smaller (regarding data storage), giving them a slight speed advantage when propagating the block.

The disadvantage is that they don't receive tx fees, which are often negligable (relative to the block reward), and the miner deems the loss as the opportunity cost for faster propagation.

In theory, the market will correct itself by encouraging higher fees on transactions, making it worth including transactions into the blocks again.

It's not a tx, unless you are talking about the newly generated coins.
Those have no input as it is given to the miners as a reward for finding a block.

I believe the string:

000000000000000000c6de332035e49f80293748b1b4d4931fde1d5d4978a83a

is the solution to the "math problem" (hash) to win the block.  Note large number of leading "zeros", 17 or 18.  It's a very hard math problem to solve with 17 or 18 leading zeros.  That's why mining uses so many ASIC computers, a tough problem.  Every 10 minutes.
