If I have a savings wallet that I've backed-up on removable media, and deleted off of all my network/internet PCs, and now I want to make sure my BTCs are being deposited correctly, how can I check the balance without having to access the wallet.dat file?

If you only have 1 copy it is not backed up. Always have at least 2 copies of any wallet and keep them in different places.
