i was thinking of quad way xfire 6870 with a single core cpu , and a stick of ram do you gusy think this psu is good enough to handle it?

There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

Does the 6870 support CF x3 & x4?. I thought that it only supported Single Crossfire.

You don't need to CF for mining just FYI.
