I'm looking at adding more video cards to my rig, but I am going to be adding them one by one instead of all at once.

Based on price and hashrate for scrypt, I'm thinking the better way to go is 3x7950s (~$960) since I've seen others able to get about 700khash/s with overclocking.  What do you think?

7950s all the way ...for me at least .I  can say these cards seem to perform very good especially in scrypt . On the other hand I seen many people complaining about the new 7970s  locked or underperforming.

@Caesar V: With all 3 + my 5870 I already have, currently it would be ~$60/day or 12.6 coins/day.  If it pays for itself in 16 days ill be more than happy. Cheesy  Even with just 1 which I am planning to start with at first will pay for itself in ~13 days.

Can cards be mixed?

I have a 7850 which I am going to use for LTC mining. My board can take another card.
Can I put in a 7950 alongside it or do both cards *have* to be the same?
I can get a 2nd 7850 fairly easily.

I believe the only time that it matters is if you're doing crossfire, but even then I think certain ranges of cards can be mixed, like a 5850 and 5870 for example.  For mining it doesn't matter if you mix.
