Me and a few friends want to start mining in our own pool, I have a decent server and would like to know if they have any guides/instructions on getting one setup.

There are a few guides on this forum. You should look for "pushpool". Setup is fairly easy.

Even though yours is gonna be private I do wonder: I see lots of new people coming in (having heard of bitcoin probably a few days earlier) stating they've started their own pool.. And people are actually joining them!

I would have thought the pool-market would have been saturated, but I guess not. Maybe it's time to make mine public.
